Green Goddess Chicken Pasta
Ingredients (serves 2)
120g Pasta (dry weight)
160g Cooked Chicken Breast (cooked & shredded)
250g Cottage Cheese
1 tbsp Green Pesto
20g Parmesan Cheese
1 Large Spring Onion
1 Cup Cherry Tomatoes
1 Cup Spinach
1 Cup Rocket
1 Cup Basil
Salt & Pepper
Lemon to serve
Instructions:
Cook the pasta, then drain and set aside, but save some of the pasta water
Blend the cottage cheese, pesto, basil, spinach, parmesan, spring onion, salt & pepper until smooth, adding the pasta water when needed.
In a bowl, mix the pasta, sauce, shredded cooked chicken, rocket and chopped cherry tomatoes.
Serve with some lemon & grated parmesan
