Green Goddess Chicken Pasta

Ingredients (serves 2)

  • 120g Pasta (dry weight)

  • 160g Cooked Chicken Breast (cooked & shredded)

  • 250g Cottage Cheese

  • 1 tbsp Green Pesto

  • 20g Parmesan Cheese

  • 1 Large Spring Onion

  • 1 Cup Cherry Tomatoes

  • 1 Cup Spinach

  • 1 Cup Rocket

  • 1 Cup Basil

  • Salt & Pepper

  • Lemon to serve

Instructions:

  1. Cook the pasta, then drain and set aside, but save some of the pasta water

  2. Blend the cottage cheese, pesto, basil, spinach, parmesan, spring onion, salt & pepper until smooth, adding the pasta water when needed.

  3. In a bowl, mix the pasta, sauce, shredded cooked chicken, rocket and chopped cherry tomatoes.

  4. Serve with some lemon & grated parmesan

Meal Prep Friendly: Keeps for 3-4 days in the fridge in a closed container
