Banana, Peanut Butter, Chocolate Bites
Ingredients:
2 ripe but firm bananas
1/4 cup natural peanut butter (creamy or crunchy)
1/2 cup dark chocolate chips or chopped dark chocolate (70% cocoa or higher)
Sea salt or crushed peanuts (optional topping)
Instructions:
Prep the Bananas:
Peel and slice bananas into 1/2-inch thick rounds or slices
Place the banana slices on a parchment-lined baking sheet.
Add Peanut Butter:
Spoon a small dollop (about 1/2 tsp) of peanut butter onto each banana slice.
Melt the Chocolate:
In a microwave-safe bowl or using a double boiler, melt the dark chocolate with the coconut oil (if using), stirring until smooth.
Drizzle Chocolate:
Drizzle the banana with the melted chocolate & Optionally, sprinkle with sea salt or crushed peanuts before the chocolate hardens.
Final Freeze:
Return the chocolate-covered bites to the freezer for 15–30 minutes, until the chocolate is set.
Meal Prep Friendly:
Make a few portions ahead of time — they’ll keep in the freezer for up to 7 days… if they last that long!
