Siracha Salmon Bowl
Ingredients:
150 g salmon fillet
125 g cooked rice (≈ 40 g uncooked)
50 g broccoli (fresh or frozen)
1/2 tsp olive oil
Pinch of salt + pepper
1 tsp Honey
1 tsp Spices
1 tsp Seasame Seeds
Dressing:
50 g Greek yoghurt (about 3 tbsp)
1 tsp sriracha (adjust to taste)
1/2 tsp lemon juice
Instructions:
Cook the rice: Prepare rice according to package directions.
Cook broccoli: Steam 4–5 mins in microwave
Cook salmon: Season with honey and spices. Bake at 200°C for 12 mins.
Make dressing: Mix Greek yoghurt, sriracha, and lemon juice until smooth.
Assemble: Add rice to a bowl, top with salmon and broccoli, and drizzle over dressing and sesame seeds.
