Siracha Salmon Bowl

Ingredients:

  • 150 g salmon fillet

  • 125 g cooked rice (≈ 40 g uncooked)

  • 50 g broccoli (fresh or frozen)

  • 1/2 tsp olive oil

  • Pinch of salt + pepper

  • 1 tsp Honey

  • 1 tsp Spices

  • 1 tsp Seasame Seeds

Dressing:

  • 50 g Greek yoghurt (about 3 tbsp)

  • 1 tsp sriracha (adjust to taste)

  • 1/2 tsp lemon juice

Instructions:

  1. Cook the rice: Prepare rice according to package directions.

  2. Cook broccoli: Steam 4–5 mins in microwave

  3. Cook salmon: Season with honey and spices. Bake at 200°C for 12 mins.

  4. Make dressing: Mix Greek yoghurt, sriracha, and lemon juice until smooth.

  5. Assemble: Add rice to a bowl, top with salmon and broccoli, and drizzle over dressing and sesame seeds.
