Banana Bread Loaf
Perfect for slow Sunday mornings, Desert or as a breakfast on the go with some greek yoghurt!
Ingredients :
110 g butter (softened or melted)
2 ripe bananas (~200 g peeled)
190 g caster sugar
2 large eggs (~110 g)
240 g self-raising flour
1 tsp vanilla essence
100 g dark chocolate (chopped)
Instructions:
Preheat oven to 180°C (160°C fan). Grease and line a loaf tin.
In a large bowl, mash the bananas. Add butter, sugar, eggs, and vanilla. Mix until smooth.
Add in the flour and gently fold until just combined.
Stir through the chopped dark chocolate, saving a few pieces to sprinkle on top.
Pour batter into the loaf tin and top with the reserved chocolate.
Bake for 45–55 minutes, or until a skewer comes out clean.
Let cool before slicing.
