Ice - Cream Bars

These no-bake bars are creamy, rich, and ridiculously simple, just 5 wholesome ingredients.

Ingredients

Base

  • 100 g walnuts (about 1 cup)

  • 150 g Medjool dates (about 1 cup, pitted)

Filling

  • 150 g cashew nuts (about 1 cup, soaked if possible)

  • 5 g vanilla extract (1 tsp)

  • 15 g maple syrup (1 tbsp)

  • A splash of water (if needed for blending)

Topping

  • 50 g dark chocolate (melted)

Instructions:

  1. Make the base: Blend walnuts and dates in a food processor until sticky and crumbly. Press firmly into a lined tray.

  2. Make the filling: Blend cashews, vanilla, and maple syrup until smooth and creamy. Add a little water if needed. Spread evenly over the base.

  3. Top it off: Melt the dark chocolate and pour it over the filling. Smooth out with a spoon.

  4. Set: Place in the freezer for at least 2–3 hours. Slice into bars once firm.
